Bill’s Meatballs

 

Ingredients

2 slices bread small pieces

½ cup milk

1 lb. ground beef

¼ lb. Italian sausage

6 Tbls. Parmesan cheese

2 Tbls. parsley

1 Tbls. olive oil

2 tsp. finely chopped garlic

1 tsp. grated lemon peel

¼ tsp. allspice

1 tsp. salt

black pepper

1 egg, lightly beaten

Olive or vegetable oil

Step 1

Soak bread in 1/2 Cup milk for 5 minutes, then squeeze dry and discard milk.

Step 2

Combine bread, beaten egg, beef, sausage, cheese, parsley, oil, garlic, lemon peel, allspice, salt & black pepper. Knead mixture until all ingredients are well blended.

Step 3

Shape mixture into small balls, 1 ½ in. in diameter. Lay on baking sheet, cover with plastic wrap, and chill for at least 1 hour.

Step 4

Heat ¼ cup of olive oil in heavy skillet until a light haze forms over it. Fry meatballs 5 – 6 at a time over moderately high heat, shaking the pan constantly to roll the balls.

Step 5

In 8-10 minutes the balls should be brown outside and show no trace of pink inside. Add more olive oil to the skillet as it is needed. Serve the meatballs hot with tomato sauce.
